 You make an Excellent point. And I'm posting a recipe here for Dusty to find, since he's so very good at finding me. :)

GRILLED LAMB CHOPS WITH MINT AND CINNAMON IN GRAPE LEAVES

8 Lamb Rib Chops (3 to 4 ounces each), trimmed of excess fat
Salt and Fresh Ground Pepper to taste
Olive Oil for Brushing
1/2 teaspoon dried mint
Pinch of ground Cinnamon
16 Large Grape Leaves

Prepare a hot fire on the grill. Lightly season chops with salt and pepper, and brush both sides with oil. Brown the chops quickly on both sides. DO NOT COOK THROUGH~! Simply GRILL MARK the chops on both sides, then remove to cool, the chops should still be raw in the center. Sprinkle both sides of chops with mint and cinnamon, being very stingy with the cinnamon.
Rinse grape leaves in cold water and drain. Pat dry carefully, so as not to tear the leaves. Trim off any thick stems and discard. Arrange the leaves in overlapping pairs on the countertop, and place a lamb chop in the center of each, wrapping the leaves around the meat with the bone exposed. Secure leaves with toothpicks.  Brush the leaves with olive and return the chops to the grill. Grill on high heat for two minutes on each side for medium rare, remove chopsticks before serving. :)

and thank YOU for that recipe!  :D OOH Speramint Jelly....Okay, just had to...

Mint Jelly

about 4 1/2pint jars

Place in a large saucepan and throughly crush:

1 1/2 cups packed fresh mint leaves

add:

1 1/2 cups apple juice
1/2 cup bottled lemon juice


Bring to a boil over high heat. Remove from heat, cover, and let stand ten minutes. Strain, and expect about 1 3/4 cups juice, adding filtered water if neccessary. Return mint juice to saucepan and add:

3 1/2 cups sugar
4 drops green food coloring
3/4 teaspoons salt


Bring to a boil, stirring constantly and add:

3 ounces liquid pectin (sold in the pudding or jam section of your grocery)

Boil hard for one minute. If it looks like it is going to BUBBLE UP pick up pot (wear heavy oven mitts) by handles and lift above the burner until the bubbles reside, then lower pot back onto burner. Repeat as neccessary for the duration of the minute, making sure the mixture is at boil the entire time. :) I learned that one the hard way. :) Remove from heat and skim off foam. Pour the hot jely into Hot, sterilized Jars, leaving 1/4 inch headspace, and process five minutes in a hot water bath.
